Description

A refreshing and aromatic Vanilla-Rosemary Lemonade that combines the zesty brightness of fresh lemon juice with the sweet warmth of vanilla and the herbal fragrance of rosemary. Perfect for cooling off on warm days, this homemade lemonade features a simple syrup infused with vanilla bean and rosemary, making it a unique and delightful twist on a classic summer beverage.

Ingredients

Simple Syrup:

  • 1 cup sugar
  • 1 vanilla bean, split
  • 2 sprigs fresh rosemary
  • 3 cups water

Lemonade:

  • 1 cup fresh lemon juice, or thawed frozen lemon juice
  • Sparkling water (optional, for serving)

Instructions

  1. Make the Simple Syrup: In a medium saucepan, combine the sugar, split vanilla bean, rosemary sprigs, and water. Bring the mixture to a boil over medium-high heat, then let it boil for about 1 minute to dissolve the sugar and infuse flavors.
  2. Steep the Flavors: Remove the saucepan from heat and allow the vanilla bean and rosemary to steep in the hot simple syrup until it is slightly cooled, about 10 minutes. This helps deepen the flavors.
  3. Combine Lemon and Syrup: Using a fine mesh sieve, strain the syrup into a large pitcher to remove the vanilla bean and rosemary. Discard the solids. Pour in the fresh lemon juice and mix well to combine.
  4. Chill the Lemonade: Cover the pitcher with a lid or plastic wrap and refrigerate the lemonade for at least 3 hours or until thoroughly chilled. This resting time allows the flavors to meld nicely.
  5. Serve: Before serving, stir the lemonade well. Pour over ice for a refreshing drink. For a sparkling twist, add a splash of sparkling water. Garnish with additional lemon slices and rosemary sprigs if desired.

Notes

  • Using fresh lemon juice will give the best flavor, but frozen lemon juice can be used as a convenient substitute.
  • Adjust the amount of sugar in the simple syrup according to your desired sweetness.
  • You can omit the sparkling water for a classic still lemonade or add it just before serving for a fizzy version.
  • For a stronger rosemary flavor, bruise the rosemary sprigs before steeping in the syrup.
  • Make sure to cool the syrup slightly before mixing with lemon juice to preserve the fresh citrus flavor.
