Description

Sweet Potato Mixture

  • 2 cups sweet potato, mashed (about 1 large or 2 medium sweet potatoes, peeled and cubed)
  • 1 cup cassava flour
  • 1/4 teaspoon sea salt (optional)


Instructions

  1. Prepare Sweet Potato: Peel and cut sweet potatoes into cubes. Steam the cubes in a saucepan with about 1 inch of water until they are fully soft and tender, approximately 15-20 minutes. Drain any remaining water and mash the sweet potatoes thoroughly until smooth.
  2. Make Dough: In a mixing bowl, combine the mashed sweet potato with cassava flour and optional sea salt. Stir together until you form a smooth, pliable dough. If the dough is too sticky, add a bit more cassava flour; if it’s too dry, add a small amount of water or more mashed sweet potato.
  3. Divide and Roll: Divide the dough into 8 equal portions. Lightly dust a clean flat surface with cassava flour and roll each piece out into a thin tortilla shape about 1/4 inch thick. Use your hands or a rolling pin for this process.
  4. Cook Tortillas: Heat a skillet over medium heat and lightly drizzle with olive oil. Cook each tortilla for about 2-3 minutes on each side or until they develop a golden brown color and are cooked through. Avoid overcrowding the skillet; cook in batches if necessary.
