Description

A delicious twist on classic sloppy joes, featuring flavorful ground chicken cooked with onions and green peppers, slow-cooked to tender perfection and topped with melted provolone cheese, served on soft buns for a hearty and comforting meal.

Ingredients

Chicken Mixture

  • 1 tablespoon vegetable oil
  • 1 pound ground chicken
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • ½ teaspoon salt

Sauce and Slurry

  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch
  • ½ cup low sodium chicken stock

Toppings and Serving

  • 6 slices provolone cheese
  • 4 hamburger buns

Instructions

  1. Brown the chicken and vegetables: In a large skillet, heat the vegetable oil over medium heat. Add the ground chicken, diced yellow onion, and diced green bell pepper. Season with ½ teaspoon salt and cook, stirring occasionally, for about 5 minutes until the chicken is no longer pink and has a light brown color.
  2. Transfer to slow cooker: Move the browned chicken and vegetable mixture into your slow cooker, spreading it evenly.
  3. Prepare the cornstarch slurry: In a small bowl, whisk together the cornstarch, Worcestershire sauce, and low sodium chicken stock until smooth and combined. Pour this mixture over the chicken in the slow cooker and stir well to incorporate.
  4. Slow cook the mixture: Cover the slow cooker with its lid and cook on LOW for 4 hours, or alternatively on HIGH for 1 ½ to 2 hours. This allows flavors to meld and the mixture to thicken.
  5. Add the provolone cheese: Remove the lid and lay the slices of provolone cheese on top of the sloppy joe mixture. Cover again and let the cheese melt for about 10 minutes.
  6. Combine and serve: Stir the melted cheese into the chicken mixture to combine fully. Serve the hot, cheesy sloppy joe mixture in warmed or toasted hamburger buns for a satisfying meal.

Notes

  • For a spicier kick, add a pinch of crushed red pepper flakes while cooking the chicken.
  • Try using different cheeses such as cheddar or mozzarella for a different flavor profile.
  • To save time, you can brown the chicken and vegetables in advance and refrigerate until ready to cook in the slow cooker.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • To reheat, warm gently on the stove or microwave and add additional chicken stock if needed to maintain moisture.
