Slow Cooker Mexican Chicken
- 2-2.5 lbs skinless boneless chicken breast

- 1/2 tsp cumin
- 1/2 tsp smoked paprika

- 4 cups cooked rice
- 2 cups frozen sweet corn
- 1 16oz canned black beans, low sodium
- 3 small avocados
- 1/4 cup chopped cilantro
- 1 lime
Instructions
- Cook Chicken in Slow Cooker: Add the chicken breasts, chunky salsa, cilantro lime dressing, chicken broth, chili powder, cumin, and smoked paprika into the slow cooker. Set it to high and cook for 4 hours to allow the chicken to become tender and infused with Mexican flavors.
