Description

Sweet and tropical Hawaiian Rice Krispie Treats featuring a buttery marshmallow base with crunchy macadamia nuts and white chocolate chips, topped with a luscious mango glaze for a refreshing twist on a classic dessert.

Ingredients

Rice Krispie Treats

  • 2 tablespoons butter
  • 10 oz. package marshmallows
  • 1 teaspoon vanilla extract
  • 6 cups Rice Krispies cereal
  • ½ cup chopped macadamia nuts
  • ½ cup white chocolate chips

Mango Glaze

  • ½ cup mango puree (about 1 mango)
  • 1 tablespoon butter, melted
  • ¼ teaspoon salt
  • 2 to cups powdered sugar

Instructions

  1. Prepare the Pan: Spray a 9×13-inch pan with nonstick spray to ensure easy removal of the treats later.
  2. Melt Butter and Marshmallows: In a large saucepan over low heat, melt 2 tablespoons of butter until fragrant, about 3-4 minutes. Add the marshmallows and stir constantly until fully melted and smooth.
  3. Add Vanilla and Cereal: Stir in 1 teaspoon of vanilla extract. Then add 6 cups of Rice Krispies cereal and mix well to coat all the cereal evenly with the marshmallow mixture.
  4. Press into Pan: Pour the marshmallow-cereal mixture into the greased pan. Using waxed paper, firmly pat it into an even layer so it sets uniformly.
  5. Top with Nuts and Chocolate: Immediately sprinkle the chopped macadamia nuts and white chocolate chips evenly over the pressed Rice Krispies. Use waxed paper to gently press them into the surface, helping them adhere well.
  6. Make the Mango Glaze: In a bowl, whisk together ½ cup mango puree, 1 tablespoon melted butter, and ¼ teaspoon salt. Gradually whisk in 2 cups powdered sugar until smooth. Add additional powdered sugar as needed to achieve a thick, drizzle-able glaze.
  7. Drizzle Glaze Over Bars: Carefully drizzle the mango glaze evenly over the top of the Rice Krispie bars, covering the entire surface for a flavorful finishing touch.
  8. Set and Serve: Allow the bars to set for at least one hour at room temperature before cutting and serving to ensure they hold together well.

Notes

  • Using waxed paper to press the mixture helps prevent sticking and results in a neat, even layer.
  • Adjust powdered sugar quantity in the glaze to your preferred consistency — thicker for more coverage, thinner for a delicate drizzle.
  • The glaze adds a fresh tropical flavor and a bit of sweetness, but you can skip it for a classic Rice Krispie Treat.
  • For best flavor, use fresh ripe mangoes when making the mango puree.
  • Store leftovers in an airtight container to maintain freshness for up to 3 days.
