- 2 ramen noodle nests (discard seasoning packets), thick cut preferred
- 2 baby bok choy, chopped
- ½ broccoli crown, chopped

- 14 oz coconut milk (one can)
- 1 cup vegetable broth
- 2 tbsp hoisin sauce
- 2 tbsp red curry paste
- 2 tbsp soy sauce
- 1 lime, juiced

- Black sesame seeds
- Chopped scallions
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the dish evenly.
- Prepare Sauce: In a mixing bowl, whisk together the coconut milk, vegetable broth, hoisin sauce, red curry paste, soy sauce, and lime juice until the mixture is smooth and the curry paste is fully incorporated.
- Assemble in Casserole Dish: Spread the ramen noodle nests, dumplings, chopped baby bok choy, and broccoli evenly in a casserole dish, ensuring the noodles are not tightly packed and vegetables are well distributed.
- Add Sauce: Pour the prepared sauce over the ingredients, making sure the noodles are mostly submerged to soften during baking. Press the noodles gently into the liquid if needed for better soaking.
- Cover and Bake: Cover the casserole dish tightly with aluminum foil and bake in the preheated oven for 30 minutes to allow the noodles to cook through and dumplings to heat.
- Uncover and Brown: Remove from the oven, take off the foil, and gently stir to separate the noodles and coat everything with sauce. Return the dish uncovered to the oven and bake for an additional 5 minutes until the dumplings are heated through and slightly browned on top.
- Rest and Serve: Let the bake sit for a few minutes after removing from the oven to allow the sauce to thicken slightly before serving. Garnish with black sesame seeds and chopped scallions for added flavor and texture.
