Ingredients
Pasta and Sauce
- 1 (16 ounce) package uncooked penne pasta
- 3 cups marinara sauce (about 1 24-ounce jar)
- 3 cups water
- 1 teaspoon salt
- Ground black pepper, to taste
Chicken
- 1 ½ lbs. raw chicken breast, diced into bite-sized pieces
Cheese and Topping
- 1-2 cups shredded mozzarella cheese or Italian cheese blend
- ½ cup grated Parmesan cheese
- 1 cup Panko breadcrumbs
Optional Garnish
- Fresh chopped herbs such as fresh basil or fresh parsley
Instructions
- Preheat and Prepare Dish: Preheat your oven to 425°F (220°C). Lightly spray a 13×9 inch baking dish with nonstick cooking spray to prevent sticking.
- Mix Ingredients: In the prepared baking dish or a large bowl, combine uncooked penne pasta, marinara sauce, water, salt, pepper, and diced raw chicken breast. Stir gently to distribute ingredients evenly.
- Cover and Bake: Cover the baking dish tightly with aluminum foil to trap moisture, allowing the pasta to cook properly. Place the dish in the preheated oven and bake covered for 30 minutes.
- Stir and Add Toppings: Carefully remove the foil and stir the pasta mixture well. The pasta will still be firm and there will be some liquid remaining. Evenly spread shredded mozzarella cheese over the top, then sprinkle with Panko breadcrumbs and grated Parmesan cheese.
- Bake Uncovered: Return the dish to the oven uncovered and bake for an additional 10-15 minutes, or until the cheese is melted, the topping is golden brown, the pasta is tender, and the chicken is fully cooked.
- Garnish and Serve: Optionally garnish with fresh chopped herbs such as basil or parsley. Serve hot and enjoy your hearty chicken parmesan casserole!
Notes
- Total cooking time can vary depending on your baking dish material and your oven. Glass or ceramic dishes may require longer baking than metal pans.
- Test the pasta for doneness by tasting it; it should be al dente and most of the liquid should be absorbed.
- Avoid overcooking to prevent mushy pasta texture.
- For extra flavor, replace some water with red wine or add Italian seasoning, garlic powder, onion powder, crushed red pepper flakes, or sundried tomatoes to the mix.
