Ingredients
Chicken
- 2 lb. chicken breasts, thighs, legs, quarters or whole chicken
Marinade
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup Extra Virgin Olive Oil (good quality)
- 1/4 cup fresh squeezed lime juice (juice of 2 limes)
- 1 Tablespoon lime zest (zest of 1 lime)
- 2 teaspoons minced garlic (about 2 cloves)
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
Instructions
- Prepare the Marinade: In a medium bowl, whisk together cilantro, extra virgin olive oil, lime juice, lime zest, minced garlic, chili powder, ground cumin, smoked paprika, salt, and ground black pepper until well combined.
- Marinate the Chicken: Place the chicken pieces in a resealable plastic bag or shallow baking dish. Pour the prepared marinade over the chicken, ensuring all pieces are coated well. Seal or cover, then refrigerate for a minimum of 30 minutes or up to 12 hours to absorb flavors.
- Preheat the Grill: Heat your outdoor gas grill or an indoor grill pan over medium heat. Lightly oil the grill grates or pan surface to prevent sticking.
- Grill the Chicken: Place the marinated chicken on the grill. Cook boneless breasts and thighs for about 4-6 minutes per side, and bone-in cuts for 8-10 minutes per side. Use an instant-read thermometer to check doneness; chicken should reach an internal temperature of 165°F (74°C).
- Serve: Remove the chicken from the grill and let rest for a few minutes if desired. Serve immediately while flavorful and juicy.
Notes
- Storage: Store any leftover chicken in an airtight container in the refrigerator. It will keep fresh for up to 5 days.
- Marinate Time: For the best flavor, marinate chicken longer, but do not exceed 12 hours as the acidity can start to break down the texture.
- Chicken Cuts: This recipe is versatile and works well with any chicken cuts you prefer—breasts, thighs, legs, or whole chicken pieces.
- Grill Alternatives: If you don’t have a grill, you can cook the chicken on a grill pan or a skillet over medium heat.
