  2. Melt Chocolate: In a small, microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring thoroughly after each, until the mixture is fully melted and smooth.
  3. Dip Strawberries: Insert a wooden skewer into the stem end of a strawberry. Hold the skewer and dip the strawberry diagonally into the melted chocolate, coating the upper portion evenly.
  4. Coat Evenly: Tilt the dipped strawberry to the left and right, gently rolling it so all sides are covered. Ensure the back is fully coated in chocolate but leave a neat triangle of red berry exposed on the front to mimic the penguin’s belly.
  5. Add Eyes and Beak: While the chocolate is still soft, press two candy eyeballs just above the uncovered red section for eyes. Then place a small triangle of dried apricot just below the eyes, above the exposed berry to create a cute beak.
