Instructions
- Prepare the pan: Preheat your oven to 350℉ (175℃). Lightly grease a 9×5 inch loaf pan or line it with parchment paper to prevent sticking, then set aside.
- Combine wet ingredients: In a large mixing bowl, add the finely grated zucchini along with any excess liquid. Add the brown sugar, vegetable oil, eggs, and vanilla extract. Stir well until the mixture is evenly combined and smooth.
- Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, ground ginger, cinnamon, ground cloves, and salt. Ensure the spices and leavening are well distributed for a uniform flavor.
- Prepare molasses mixture: In a third bowl, combine the molasses and hot water. Whisk until fully blended and the mixture is smooth to integrate into the batter easily.
