Ingredients

Lemonade Base

  • 1 cup fresh lemon juice (about 45 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water, divided

Whipped Topping

  • 1 cup heavy whipping cream
  • 1/2 teaspoon vanilla extract

  • Ice cubes

Instructions

  1. Blend the Lemonade Base: In a blender, combine the fresh lemon juice, granulated sugar, 1 cup of cold water, and 1 cup fresh raspberries. Blend until the mixture is smooth and the raspberries are fully incorporated.
  2. Strain and Mix: Pour the blended mixture through a fine mesh sieve into a large pitcher to remove the seeds and pulp. Use the back of a spoon to press the liquid through for maximum flavor. Add the remaining 3 cups of cold water to the pitcher and stir well. Taste the lemonade and adjust the sweetness if needed by adding a little more sugar. Set the pitcher aside.
  3. Whip the Cream: In a separate mixing bowl, add the heavy whipping cream and vanilla extract. Using an electric mixer on medium speed, beat the cream until soft peaks form and it’s light and fluffy.
  4. Tint the Whipped Cream: Gently fold about 1 cup of the prepared lemonade mixture into the whipped cream until evenly combined. This will tint the cream a lovely pink for your whipped topping.
  5. Assemble the Drinks: Fill serving glasses with ice cubes. Pour the raspberry lemonade mixture into each glass, filling them about 3/4 full.
