Ingredients
Lemonade Base
- 1 cup fresh lemon juice (about 4–5 lemons)
- 1 cup granulated sugar
- 4 cups cold water, divided
- 1 cup fresh raspberries (plus extra for garnish)
Whipped Topping
- 1 cup heavy whipping cream
- 1/2 teaspoon vanilla extract

Instructions
- Blend the Lemonade Base: In a blender, combine the fresh lemon juice, granulated sugar, 1 cup of cold water, and 1 cup fresh raspberries. Blend until the mixture is smooth and the raspberries are fully incorporated.
- Strain and Mix: Pour the blended mixture through a fine mesh sieve into a large pitcher to remove the seeds and pulp. Use the back of a spoon to press the liquid through for maximum flavor. Add the remaining 3 cups of cold water to the pitcher and stir well. Taste the lemonade and adjust the sweetness if needed by adding a little more sugar. Set the pitcher aside.
- Whip the Cream: In a separate mixing bowl, add the heavy whipping cream and vanilla extract. Using an electric mixer on medium speed, beat the cream until soft peaks form and it’s light and fluffy.
- Tint the Whipped Cream: Gently fold about 1 cup of the prepared lemonade mixture into the whipped cream until evenly combined. This will tint the cream a lovely pink for your whipped topping.
- Assemble the Drinks: Fill serving glasses with ice cubes. Pour the raspberry lemonade mixture into each glass, filling them about 3/4 full.
- Add the Whipped Topping: Spoon a generous dollop of the pink-tinted whipped cream onto each glass of lemonade.
- Garnish and Serve: Garnish each drink with a few fresh raspberries and a slice of lemon on the rim. Serve immediately for a refreshing, creamy treat!
