Ingredients

Banana Layer

  • 2 medium semi-ripe bananas

Peanut Butter Layer

  • ½ cup + 2 tablespoons drippy, creamy peanut butter

Chocolate Layer

  • 1.5 cups dark chocolate chips
  • 1 teaspoon coconut oil (optional)

Toppings

  • Flaky sea salt (optional)


Instructions

  1. Prepare baking sheet: Line a medium-sized baking sheet with parchment paper to prevent sticking and for easy removal of the bark.
  2. Slice bananas: Peel and slice the bananas into ⅓-inch thick slices on a slight angle for better fit and uniform size.
  3. Arrange banana slices: Place the banana slices in a rectangular shape on the lined baking sheet, making sure they touch to hold together when frozen.
  4. Spread peanut butter: Evenly spread the creamy peanut butter over the banana slices to cover completely. If thick, warm in microwave for 10-15 seconds to soften, then spread.
  5. Freeze first layer: Place the baking sheet in the freezer for 20 minutes to set the peanut butter layer.
  6. Melt chocolate: Heat the chocolate chips (and coconut oil if using) in 30-second intervals in the microwave, stirring in between, until fully melted but not burnt.
  7. Top with chocolate and salt: Remove the bark from the freezer, pour and spread the melted chocolate over the peanut butter layer evenly, then sprinkle with flaky sea salt if desired.
  8. Freeze to set: Return the baking sheet to the freezer for at least 90 minutes, up to 2 hours, until fully set.
  9. Serve: Once set, remove from freezer, flip over, peel off the parchment paper, and break into large pieces before serving.
