Instructions
- Combine liquid ingredients and sugar: In a medium-sized mixing bowl, add ¼ cup fish sauce, ½ cup room temperature water, and 2 to 4 tablespoons of sugar. Stir the mixture thoroughly until the sugar dissolves completely. If necessary, microwave the mixture for 10 seconds to help the sugar dissolve.
- Add flavorings: Stir in the juice of 2 limes, finely minced garlic, sliced Bird’s eye Thai chilis (or chili sauce if using), and shredded carrots. Taste and adjust the seasoning by adding more fish sauce or lime juice according to your preference.
- Let flavors meld: Allow the sauce to rest for at least 10 minutes at room temperature so the flavors can fully combine and develop.
