Description

This Vegetarian White Chili is a creamy, comforting dish made with white beans, jalapeños, and vegan cream cheese, seasoned with a unique blend of spices for a flavorful and hearty meal. Perfect for a cozy dinner, it features optional fresh vegetables for added texture and nutrition.

Ingredients

Main Ingredients

  • 2 cups vegetable broth
  • 4 cloves garlic, peeled and minced
  • 2 (15 oz) cans white beans, drained
  • 1 (7 oz) can jalapeño slices, drained
  • 8 oz vegan cream cheese
  • Salt, to taste
  • Pepper, to taste

White Chili Seasoning

  • ¼ teaspoon ground cloves
  • 1 tablespoon chili powder
  • 2 tablespoons ground cumin
  • 2 teaspoons garlic powder
  • 2 teaspoons maple syrup

Optional Add-Ons

  • 1 cup chopped bell pepper
  • ¾ cup chopped white onion
  • 1 cup cooked and peeled corn

Instructions

  1. Prepare the base: Heat a bit of oil or vegetable broth in a casserole or large skillet to keep it oil-free. Add the minced garlic along with the optional chopped onions and bell pepper, frying for about 5 minutes until softened and fragrant.
  2. Add liquids and seasoning: Pour in the vegetable broth, then add the vegan cream cheese along with the white chili seasoning mixture (ground cloves, chili powder, cumin, garlic powder, and maple syrup) and the drained jalapeño slices. Stir to combine and cook over medium heat for about 10 minutes to meld the flavors.
  3. Finish with beans and corn: Season the chili with salt and pepper to taste. Add the drained white beans and optional cooked corn, then continue cooking for another 5 minutes until everything is heated through and well blended.
  4. Serve: Divide the chili into bowls or plates and enjoy hot as a hearty vegetarian meal.

Notes

  • For an oil-free version, use vegetable broth instead of oil when frying the aromatics.
  • Adjust the amount of jalapeños to control the heat level of the chili.
  • The creaminess comes from vegan cream cheese; you can substitute it with regular cream cheese if not vegan.
  • Optional vegetables add freshness and additional textures but can be omitted.
  • Serve with toppings like cilantro, avocado, or vegan sour cream for extra flavor.
