Ingredients

Shortbread Base

  • 1 cup All-purpose flour
  • 1/2 cup Vegan butter, softened
  • 1/4 cup Granulated sugar

Matcha Caramel

  • 1 cup Sweetened condensed oat milk
  • 1/2 cup Granulated sugar
  • 2 tbsp Coconut oil
  • 2 tbsp Matcha powder

Coating

  • 1 cup Vegan white chocolate, melted


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) to prepare for baking the shortbread base.
  2. Make Shortbread Dough: In a mixing bowl, cream together the vegan butter and granulated sugar until smooth and fluffy, about 2-3 minutes. Add in the sweetened condensed oat milk and all-purpose flour. Mix until a soft dough forms.
  3. Shape and Bake Base: Firmly press the dough evenly into silicone molds or a lined baking pan. Bake for 12-15 minutes until the edges are lightly golden brown. Let cool completely.
  4. Prepare Matcha Caramel: In a saucepan over medium heat, combine the sweetened condensed oat milk, granulated sugar, coconut oil, and matcha powder. Stir continuously until it begins to bubble. Reduce heat to low and continue stirring for 5-7 minutes until it thickens to a caramel-like consistency.
  5. Assemble Caramel Layer: Carefully pour the matcha caramel over the cooled shortbread base, ensuring even distribution. Place in the refrigerator or freezer for at least 1 hour to set.
  6. Melt White Chocolate: Melt the vegan white chocolate using a double boiler or microwave, stirring until smooth.
  7. Coat Bars: Once the caramel is set, gently remove each bar from the molds and dip into the melted white chocolate, fully coating each one.
  8. Set Chocolate Coating: Place the coated bars on a baking sheet lined with parchment paper. Allow to set in the refrigerator for 30 minutes or until the chocolate hardens.
