Description

This Thai Peanut Noodles recipe features a creamy, flavorful peanut sauce combined with tender noodles for a quick and delicious meal. The sauce blends peanut butter, soy sauce, chili-garlic, sesame oil, and lime juice to create a perfect balance of savory, spicy, and tangy flavors. Garnished with crushed red pepper flakes, green onions, and roasted peanuts, these noodles make a satisfying dish ideal for lunch or dinner.

Ingredients

For the Thai Peanut Sauce

  • ¼ cup creamy peanut butter (use ½ cup for more peanut flavor)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chili-garlic sauce or sriracha
  • 1 tablespoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon lime juice
  • 1 teaspoon garlic powder or 1 clove garlic, finely minced or grated
  • 1 teaspoon ginger powder or 1 teaspoon fresh grated ginger
  • 1 tablespoon water or stock, or more as needed for thinning

For the Thai Peanut Noodles

  • 8 ounces noodles (rice, flour, egg, ramen, or udon noodles)
  • 1-2 tablespoons sesame oil
  • Garnish: crushed red pepper flakes, fresh chopped green onion, crumbled roasted peanuts, or sesame seeds

Instructions

  1. Make the Thai Peanut Sauce: In a small bowl, whisk together the peanut butter, soy sauce, rice wine vinegar, chili-garlic sauce, sesame oil, honey, lime juice, garlic powder, and ginger powder until smooth and well combined. Gradually add water a teaspoon at a time, stirring until the sauce reaches your desired consistency.
  2. Cook the Noodles: Prepare the noodles by boiling them in hot water according to package instructions, about 4-5 minutes until tender but still firm. Drain the noodles thoroughly.
  3. Heat the Sauce: In a wok or large skillet, warm the sesame oil over medium heat. Add the prepared Thai peanut sauce and stir, heating it for about 1 minute to meld the flavors and warm the sauce through.
  4. Toss Noodles with Sauce: Add the drained noodles to the pan with the warmed peanut sauce. Toss well to coat all the noodles evenly with the sauce.
  5. Serve and Garnish: Transfer the saucy noodles to serving bowls and garnish with crushed red pepper flakes, chopped green onions, roasted peanuts, or sesame seeds for added texture and flavor. Serve immediately.

Notes

  • You can adjust the peanut butter amount to your preference for a milder or stronger peanut flavor.
  • If you prefer a thinner sauce, add more water or stock gradually to reach the desired consistency.
  • Use fresh garlic and ginger if available for a brighter, more vibrant flavor.
  • Substitute chili-garlic sauce with sriracha for a slightly sweeter heat.
  • Choose your favorite type of noodles: rice, egg, ramen, or udon all work well.
  • For a vegan version, replace honey with maple syrup or agave.
  • This recipe is best served fresh but noodles with peanut sauce can be stored refrigerated up to 2 days.
