Ingredients
Meat and Vegetables
- 1 lb. ButcherBox Ground Beef
- 1/2 cup onion, chopped finely
- ½ tablespoon minced garlic (2 cloves)
- 2 cups red bell pepper, diced
Seasonings and Liquids
- 2 tablespoons taco seasoning, low sodium
- 1 tablespoon tomato paste
- 2 cups beef broth
- 2 cups water
Pasta and Cheese
- 3 cups medium shells pasta (10 oz)
- 1 cup shredded cheddar cheese
Instructions
- Prepare the Pan and Heat: Spray a large pan or pot with olive oil spray and heat it over medium-high heat for about 3 minutes to ensure an even cooking surface.
- Cook the Ground Beef and Vegetables: Add ground beef, finely chopped onion, minced garlic, and diced red bell peppers into the pan. Cook for approximately 10 minutes until the beef is fully cooked and no longer pink, stirring occasionally to combine the flavors and prevent sticking.
- Add Pasta and Seasonings: Stir in the dry medium shell pasta, taco seasoning, and tomato paste, followed by pouring in the beef broth and water. Mix everything well to combine all ingredients evenly.
- Cook the Pasta: Cover the pan and bring the mixture to a boil, which should take about 5 minutes. Once boiling, remove the cover and reduce the heat to medium. Continue cooking while stirring every few minutes for 10 to 12 minutes until the pasta is tender and the liquid has mostly reduced.
- Add Cheese and Finish: Remove the pan from heat and immediately add the shredded cheddar cheese. Stir thoroughly until the cheese is fully melted and the mixture is creamy and well combined. Serve warm for a satisfying meal.
