Description

Ingredients

For the Meat

  • 1 lb lean ground beef
  • 2 teaspoons Worcestershire sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper

For the Sweet Potatoes

  • 4 small sweet potatoes
  • 1 tablespoon avocado oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

For the Bowls

  • 1 bag shredded lettuce (8 oz)
  • 1 red onion, thinly sliced
  • 1 pint diced tomatoes (10 oz)
  • ½ cup pickles, diced
  • Special sauce (see notes)


Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the sweet potatoes.
  2. Prepare Sweet Potatoes: Peel and dice the sweet potatoes into bite-sized pieces. Place them in a large bowl and toss with avocado oil, garlic powder, onion powder, salt, and pepper until evenly coated.
  3. Roast Sweet Potatoes: Spread the seasoned sweet potatoes out on a lined baking sheet to ensure even cooking. Bake them in the oven for 30 to 40 minutes, stirring halfway through to promote even roasting until tender and lightly browned.
  4. Cook Ground Beef: While the sweet potatoes roast, heat a large skillet over medium heat with a small amount of oil. Add the ground beef and cook until browned and fully cooked, approximately 8 minutes.
  5. Season Meat: Add Worcestershire sauce, garlic powder, onion powder, salt, and pepper to the beef. Stir well to combine and continue cooking briefly to meld flavors.
  6. Assemble Bowls: Once both the sweet potatoes and meat are cooked, assemble your burger bowls by layering shredded lettuce, roasted sweet potatoes, seasoned ground beef, thinly sliced red onion, diced tomatoes, and diced pickles. Finish by drizzling the special sauce on top.
