Description

These Sweet Chili Chicken Wraps combine tender, marinated chicken strips with fresh, crunchy vegetables wrapped in warm tortillas, topped with a flavorful sweet chili sauce. Perfect as a quick lunch or light dinner, they offer a spicy, tangy, and refreshing taste in every bite.

Ingredients

Chicken Marinade

  • 2 boneless, skinless chicken breasts
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon lime juice
  • Salt and pepper to taste

Wrap Fillings

  • 4 large tortillas or wraps
  • 1 cup shredded lettuce
  • 1/2 cup julienned carrots
  • 1/2 cup sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise (optional)
  • Lime wedges for serving

Instructions

  1. Slice the Chicken: Begin by slicing the chicken breasts into thin strips to ensure quick and even cooking.
  2. Prepare the Marinade: In a bowl, combine sweet chili sauce, soy sauce, olive oil, minced garlic, grated ginger, lime juice, salt, and pepper. Stir well until thoroughly blended.
  3. Marinate the Chicken: Add the chicken strips to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes to enhance the flavor.
  4. Cook the Chicken: Preheat a non-stick skillet over medium-high heat. Add the marinated chicken strips and cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked through and golden brown on the edges.
  5. Warm the Tortillas: Heat the tortillas in a dry skillet or microwave them for a few seconds to make them pliable and easier to fold.
  6. Assemble the Wraps: If desired, spread a thin layer of mayonnaise on each tortilla. Then layer shredded lettuce, julienned carrots, sliced cucumber, chopped cilantro, and green onions in the center of each tortilla.
  7. Add Chicken: Divide the freshly cooked chicken strips evenly over the vegetables on each tortilla.
  8. Roll the Wraps: Fold the sides of the tortillas inwards, then roll tightly from bottom to top, ensuring the filling is securely enclosed.
  9. Serve: Slice each wrap diagonally in half and serve with fresh lime wedges on the side for an extra zing.

Notes

  • For extra heat, add sliced jalapenos or a dash of hot sauce to the wraps.
  • Substitute lettuce with spinach or kale for a different texture.
  • This dish is perfect for meal prep; store components separately to keep them fresh.
  • Grilled chicken can be used instead for a smoky flavor.
  • Vegan option: replace chicken with crispy tofu or grilled portobello mushrooms.
