Ingredients
Tea Base
- 2 cups water
- 2 tsp loose-leaf smoky black tea, or 2 tea bags (such as Lapsang Souchong or Harney & Sons Black Cask Bourbon Tea)
- 1 cup milk (dairy or non-dairy)
Spices
- 4-5 black peppercorns
- 3 whole cloves
- 3 green cardamom pods, slightly crushed
- 1 cinnamon stick
- 1 star anise (optional)
Sweetener
- 1-2 tablespoons brown sugar (adjust to taste)
Instructions
- Simmer Spices: In a small pot, bring 2 cups of water to a boil. Add the black peppercorns, cloves, cardamom pods, cinnamon stick, and star anise if using. Let the spices simmer gently for about 5 minutes to release their rich, aromatic flavors.
- Add Tea: After the spices have infused, add the smoky black tea leaves or tea bags to the pot. Allow the tea to steep for 3-4 minutes, adjusting steeping time to control the strength and smokiness of the brew.
- Incorporate Milk and Sweetener: Stir in the milk and brown sugar. Simmer the mixture on low heat for another 3-4 minutes, stirring occasionally to blend the spices, tea, and sweetness evenly.
- Strain and Serve: Remove the pot from heat and strain the chai into mugs, filtering out the spices and tea leaves for a smooth, flavorful drink. Serve hot for the best experience.
