Sloppy Joe Casserole with Noodles is a hearty and cheesy comfort food that combines seasoned ground beef, egg noodles, mixed vegetables, and melted cheddar cheese. It’s easy to make and a crowd-pleaser, perfect for busy weeknights.
Ingredients
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 cup ketchup
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1 teaspoon brown sugar
Salt and pepper to taste
8 ounces egg noodles
1 cup shredded cheddar cheese
1 cup frozen mixed vegetables (peas, carrots, corn)
1 tablespoon olive oil
Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic, and cook for 2-3 minutes until the onion becomes translucent.
- Add ground beef to the skillet and cook, stirring occasionally, until browned and fully cooked. Drain any excess fat if needed.
- Stir in ketchup, Worcestershire sauce, mustard, brown sugar, salt, and pepper. Let the mixture simmer for 5 minutes to combine the flavors.
- While the beef mixture simmers, cook the egg noodles according to package instructions. Drain the noodles and set aside.
- In a large mixing bowl, combine the cooked noodles, beef mixture, and frozen mixed vegetables. Stir until evenly mixed.
- Transfer the mixture to a greased 9×13-inch baking dish and sprinkle shredded cheddar cheese evenly over the top. Bake for 25-30 minutes, until the cheese is melted and bubbly.
- Remove the casserole from the oven, let it cool for a few minutes, and garnish with chopped fresh parsley before serving.
Notes
For a vegetarian version, use plant-based ground meat or lentils instead of beef.
If you prefer a spicier dish, add red pepper flakes or diced jalapeños to the beef mixture.
Substitute the egg noodles with any pasta type like penne, fusilli, or rotini.
This casserole can be made ahead of time and stored in the fridge for up to 24 hours before baking.
