Vegetables

  • 1 pint grape tomatoes
  • 1 lb. asparagus

Seasoning & Oil

  • 2 Tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat Oven: Preheat the oven to 400ºF (205ºC) to prepare for roasting the vegetables evenly.
  2. Prepare Asparagus: Slice off any dry or woody ends from the asparagus spears, typically about the bottom inch, to ensure tenderness.
  3. Arrange Vegetables: Spread the asparagus spears evenly on half of a large baking sheet and place the grape tomatoes on the other half to allow for even roasting.
  4. Add Olive Oil and Toss: Drizzle 1 tablespoon of olive oil over the asparagus and the remaining tablespoon over the tomatoes. Toss each side to coat the vegetables evenly in oil.
  5. Add Garlic and Seasoning: Sprinkle the minced garlic over the tomatoes and toss to combine. Add a generous pinch of salt and pepper to both the asparagus and tomatoes for enhanced flavor.
  6. Roast Vegetables: Roast the vegetables in the preheated oven for 20 minutes, then stir to promote even cooking.
  7. Continue Roasting: Return the vegetables to the oven and roast for another 10 minutes. Stir again, then continue roasting, checking every 5 minutes until the vegetables have reached your desired tenderness, approximately 35 minutes total.
  8. Adjust and Serve: If one type of vegetable finishes cooking earlier, remove it and continue roasting the other. After roasting, taste and season with an additional pinch of salt and pepper if needed before serving.
