- 6 Tablespoons salted butter
- 16 ounce bag mini marshmallows, divided
- 3.5 ounce box instant pistachio pudding mix
- 1 teaspoon pure vanilla extract
- 6 cups Rice Krispies cereal
- ½ cup dark chocolate, melted
Instructions
- Melt Butter and Marshmallows: In a large pot over medium heat, melt the butter. Add all but 1 cup of the mini marshmallows and stir continuously until the mixture is completely smooth and melted. Remove the pot from heat to prevent burning.
- Add Pudding Mix and Vanilla: Stir in the dry pistachio pudding mix and pure vanilla extract using a spatula. Fold these ingredients in gently to combine thoroughly but without overmixing.
- Combine Cereal and Marshmallows: Add the Rice Krispies cereal and the remaining 1 cup of mini marshmallows to the pot mixture. Mix completely until the cereal and marshmallows are evenly coated with the pistachio marshmallow blend.
- Press into Pan: Pour the mixture into a parchment paper-lined 9-inch square baking dish. Use a spatula or your hands (lightly greased) to press it down evenly. Allow the treats to cool and set for at least one hour to firm up.
- Cut and Drizzle Chocolate: After setting, remove the treats from the pan by lifting the parchment paper. Cut into 16 equally sized squares. Drizzle the melted dark chocolate evenly over the top of each square and allow the chocolate to set for about 15 minutes.
- Serve and Store: Enjoy immediately or store in an airtight container at room temperature. These treats are also delicious served chilled from the refrigerator.

- To achieve a smooth and even chocolate drizzle without lumps, dip a fork in the melted chocolate, gently tapping off any excess before drizzling over the treats.
