Description

Peach Cobbler Cheesecake combines the creamy richness of cheesecake with the sweet, spiced peaches and buttery cobbler topping, all served in individual cups for easy serving and enjoyment.


Ingredients

1 cup graham cracker crumbs

2 tablespoons granulated sugar (for crust)

4 tablespoons unsalted butter, melted (for crust)

8 oz cream cheese, softened

¼ cup granulated sugar (for cheesecake filling)

½ teaspoon vanilla extract

1 large egg

¼ cup sour cream

2 ripe peaches, peeled and diced

¼ cup brown sugar

1 teaspoon cinnamon

¼ teaspoon nutmeg

2 tablespoons unsalted butter, melted (for peach cobbler topping)

¼ cup all-purpose flour

¼ cup rolled oats (optional, for extra texture)

Whipped cream (for garnish)

Cinnamon (a sprinkle, for garnish)


Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press about 1 tablespoon of the mixture into the bottom of each cupcake liner to form the crust.
  3. Bake the crusts for 5-7 minutes until golden. Set aside to cool.
  4. In a large bowl, beat softened cream cheese and sugar until smooth. Add vanilla extract, egg, and sour cream, beating until creamy.
  5. Spoon the cheesecake mixture over the cooled crusts, filling each cup about ¾ full.
  6. In a separate bowl, mix diced peaches, brown sugar, cinnamon, nutmeg, melted butter, flour, and oats (if using). Coat peaches and form a crumbly topping.
  7. Spoon a generous amount of the peach mixture over the cheesecake layer in each cup.
  8. Bake for 20-25 minutes until the cheesecake is set and the cobbler topping is golden brown.
  9. Cool the cheesecake cups completely in the pan. Chill in the refrigerator for at least 2 hours before serving.
  10. Before serving, top with whipped cream and a light sprinkle of cinnamon.

Notes

For a fruity twist, swap the peaches with mixed berries like blueberries, raspberries, and strawberries.

Try using crushed shortbread cookies or vanilla wafer crumbs for the crust.
