Description

This Peach Bruschetta recipe brings a fresh and summery twist to traditional Italian bruschetta by replacing tomatoes and basil with sweet, juicy peaches, creamy ricotta, and fragrant mint. It’s light, flavorful, and perfect as a brunch, snack, or appetizer for warm-weather gatherings.

Ingredients

Bread Base

  • 1 baguette, sliced into 810 pieces
  • 1 tbsp olive oil

Cheese Layer

  • 1 cup ricotta cheese

Topping

  • 2 ripe peaches, diced
  • 2 tbsp fresh mint leaves, finely chopped (plus extra for garnish)
  • Salt and pepper, to taste

Finish

  • 2 tbsp honey

Instructions

  1. Toast the Baguette Slices: Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush each slice lightly with olive oil. Toast in the oven for about 8-10 minutes, or until golden and crispy. Remove from the oven and let cool slightly.
  2. Prepare the Toppings: While the baguette toasts, dice the peaches into small, bite-sized pieces. In a small bowl, combine the diced peaches with the chopped fresh mint. Season with a pinch of salt and pepper to taste, and stir to combine.
  3. Assemble the Bruschetta: Spread a generous layer of ricotta cheese onto each toasted baguette slice. Spoon the peach and mint mixture on top of the ricotta. Drizzle each bruschetta with honey to add a touch of sweetness.
  4. Serve: Arrange the assembled bruschetta on a serving platter. Garnish with additional mint leaves if desired, and serve immediately while the bread is still slightly warm and crisp.

Notes

  • Peach Bruschetta is a sweet and refreshing alternative to the traditional tomato bruschetta.
  • Use ripe, in-season peaches for the best flavor and texture.
  • This dish is best enjoyed immediately to preserve the crispness of the bread.
  • Ricotta can be swapped for mascarpone or goat cheese if desired.
  • Drizzle with a little balsamic glaze for extra depth of flavor.
