Ingredients

Sweet Potato Waffle

  • 3 large eggs, divided

  • 1 tsp oil, plus more for waffle iron and frying pan

Sandwich Fillings

Instructions

  1. Prepare the Waffle Iron: Heat your waffle iron thoroughly and grease it well with oil or non-stick spray. Set aside while you prepare the batter.
  2. Make Sweet Potato Waffle Batter: In a medium mixing bowl, whisk 1 egg (or 2 egg whites if preferred). Add the grated sweet potato along with cumin, paprika, garlic salt, and 1 teaspoon of oil. Mix until all ingredients are fully combined.
