Description

This No Bake Protein Cheesecake Jar is a deliciously creamy, high-protein dessert perfect for summer. It combines a light strawberry compote, a creamy protein-packed cheesecake layer, and a crunchy vanilla wafer crust. Low in calories and sugar, this no bake treat makes for a healthy and refreshing dessert or snack.


Ingredients

Strawberry Compote:

  • ½ cup Chopped Strawberries (75g)
  • 1 tablespoon Water (15ml)
  • ½ tablespoon Zero Calorie Monkfruit Sweetener (6g), sugar-free

Cheesecake Layer:

  • 1½ oz Softened Reduced Fat Cream Cheese (42g)
  • 3 tablespoons Non-fat Greek Yogurt (42g)
  • 2 tablespoons Vanilla Protein Powder (Whey-casein, 11g)
  • 1 scoop Unflavored Collagen (10g)

Crust:

  • 3 Vanilla Wafers, Crushed (15g)


Instructions

  1. Prepare Strawberry Compote: Heat chopped strawberries, water, and monkfruit sweetener in a small saucepan over medium heat, stirring occasionally. Cook until the strawberries break down and the mixture bubbles, about 7-10 minutes. Use a spoon or potato masher to mash the compote to your desired consistency. Remove from heat and allow to cool, then refrigerate.
  2. Make Cheesecake Layer: Place softened reduced fat cream cheese in a bowl and whisk with a wire whisk or hand mixer until light and airy, about 30-45 seconds. Add non-fat Greek yogurt and beat until combined. Add vanilla protein powder and unflavored collagen, mixing thoroughly to create a smooth, creamy cheesecake layer.
  3. Assemble the Cheesecake Jar: Crush the vanilla wafers and place them at the bottom of a jar or serving container to form the crust. Layer the cheesecake mixture on top of the crust, smoothing it evenly. Finally, spoon the cooled strawberry compote gently over the cheesecake layer and smooth it out.
