Ingredients

Casserole:

  • 1 ½ lbs ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ½ cup dill pickles, chopped
  • 2 cups shredded cheddar cheese
  • 4 large eggs
  • ½ cup heavy cream
  • ¼ cup mayonnaise
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon sugar-free ketchup
  • Salt to taste
  • Pepper to taste

Keto Big Mac Sauce:

  • ¼ cup mayonnaise
  • 1 tablespoon dill pickle, finely chopped
  • 2 teaspoons yellow mustard
  • 2 teaspoons sugar-free ketchup
  • ½ teaspoon white vinegar
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Optional Toppings:

  • Shredded lettuce
  • Tomato, diced
  • Sliced pickles

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned, then drain any excess fat. Add the diced onion and minced garlic and cook until the onion becomes translucent.
  3. Add Pickles and Cheese: Stir in the chopped dill pickles and 1 cup of the shredded cheddar cheese, mixing well. Spread this mixture evenly in a greased baking dish.
  4. Prepare Egg Mixture: In a bowl, whisk together the eggs, heavy cream, mayonnaise, yellow mustard, Worcestershire sauce, sugar-free ketchup, salt, and pepper until fully combined.
  5. Assemble Casserole: Pour the egg mixture over the beef mixture evenly in the baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
  6. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden brown on top.
  7. Make Keto Big Mac Sauce: While the casserole is baking, in a small bowl combine mayonnaise, finely chopped dill pickle relish, yellow mustard, sugar-free ketchup, white vinegar, onion powder, garlic powder, salt, and pepper. Mix well until smooth and uniform.
  8. Cool and Top: Once the casserole is finished baking, remove it from the oven and let it cool slightly. Top with shredded lettuce, diced tomatoes, and sliced pickles as desired.
  9. Serve: Drizzle the prepared Keto Big Mac Sauce over the casserole. Serve immediately and enjoy your delicious low-carb Big Mac casserole!

Notes

  • You can substitute heavy cream with full-fat coconut milk for a dairy-free option.
  • Use sugar-free ketchup and mustard to keep the recipe keto-friendly and low in sugar.
  • Feel free to add more or fewer pickles according to your taste preference.
  • The casserole can be stored in the refrigerator for up to 3 days and reheated before serving.
  • For a spicier twist, add a pinch of cayenne pepper or hot sauce to the egg mixture.
