Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
- Cook Beef Mixture: In a large skillet over medium heat, cook the ground beef until browned, then drain any excess fat. Add the diced onion and minced garlic and cook until the onion becomes translucent.
- Add Pickles and Cheese: Stir in the chopped dill pickles and 1 cup of the shredded cheddar cheese, mixing well. Spread this mixture evenly in a greased baking dish.
- Prepare Egg Mixture: In a bowl, whisk together the eggs, heavy cream, mayonnaise, yellow mustard, Worcestershire sauce, sugar-free ketchup, salt, and pepper until fully combined.
- Assemble Casserole: Pour the egg mixture over the beef mixture evenly in the baking dish. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden brown on top.
- Make Keto Big Mac Sauce: While the casserole is baking, in a small bowl combine mayonnaise, finely chopped dill pickle relish, yellow mustard, sugar-free ketchup, white vinegar, onion powder, garlic powder, salt, and pepper. Mix well until smooth and uniform.
- Cool and Top: Once the casserole is finished baking, remove it from the oven and let it cool slightly. Top with shredded lettuce, diced tomatoes, and sliced pickles as desired.
- Serve: Drizzle the prepared Keto Big Mac Sauce over the casserole. Serve immediately and enjoy your delicious low-carb Big Mac casserole!
