Description

Marry Me Chicken Soup is a hearty and flavorful Italian-inspired dish featuring ground chicken cooked with sun-dried tomatoes, Italian seasoning, and ditalini pasta, all simmered in a savory chicken broth and finished with fresh spinach and creamy blended cottage cheese. Topped with Parmesan cheese, this comforting soup balances rich tomato flavors with delicate cheese and tender greens, perfect for a satisfying meal any day.

Ingredients

Meat and Oils

  • 1 lb. ground chicken
  • 1 tablespoon sun-dried tomato oil
  • 2 tablespoons olive oil
  • 2 tablespoons Italian seasoning

Vegetables and Aromatics

  • ½ yellow onion, diced
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, cut into strips

Others

  • 1 teaspoon salt
  • 3 tablespoons tomato paste
  • 4 oz. ditalini pasta
  • 6 cups chicken broth
  • 2 cups torn spinach
  • 1 cup blended cottage cheese
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Prepare the Chicken Mixture: In a bowl, combine the ground chicken, sun-dried tomato oil, and Italian seasoning. Mix thoroughly to blend the flavors evenly. Set aside.
  2. Heat the Oil: Place a large Dutch oven over medium heat and warm the olive oil until shimmering.
  3. Cook the Chicken: Break the prepared chicken mixture into bite-sized pieces resembling unrolled meatballs. Add to the heated Dutch oven and cook for 2-3 minutes, browning the chicken on all sides to develop flavor.
  4. Sauté Aromatics: Add the diced onion, minced garlic, salt, sun-dried tomatoes, and tomato paste to the pot. Stir and cook together for an additional 2 minutes to blend the ingredients and soften the vegetables.
  5. Add Pasta and Broth: Pour in the ditalini pasta and chicken broth. Bring the soup to a boil, then reduce the heat to a simmer. Cook for 15 minutes, stirring occasionally to prevent the pasta from sticking to the bottom of the pot.
  6. Incorporate Spinach: Once the pasta is fully cooked, add the torn spinach to the pot. Stir to allow the spinach to wilt evenly into the soup.
  7. Finish with Cottage Cheese: Remove the pot from the heat. Stir in the blended cottage cheese until smooth. If the soup is too hot, the cottage cheese may curdle slightly—keep stirring to achieve a creamy consistency.
  8. Serve: Ladle the soup into bowls and top each serving with grated Parmesan cheese for a savory finish.

Notes

  • The Italian seasoning used contains salt; if you use a salt-free version, adjust the salt quantity accordingly.
  • Ground turkey is a suitable substitute for the ground chicken if preferred.
  • For an extra protein boost, use bone broth instead of chicken broth.
