Ingredients

Chicken and Seasoning

  • 2 large boneless, skinless chicken breasts, sliced thinly
  • Salt and pepper, to taste
  • 2 tbsp olive oil, for searing

Sauce

  • 3 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp crushed red pepper flakes (optional)

Pasta & Garnish

  • 8 oz pasta (penne, rigatoni, or fettuccine)
  • Fresh basil leaves, for garnish


Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain the pasta and set it aside.
  2. Season & Sear Chicken: Pat the sliced chicken breasts dry and season both sides with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown and cooked through, about 3 to 4 minutes per side. Remove the chicken from the skillet and set aside.
  3. Sauté Garlic & Sun-Dried Tomatoes: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the chopped sun-dried tomatoes and cook for an additional minute to release their flavors.
  4. Prepare Sauce: Pour in the chicken broth, heavy cream, and sprinkle in the grated Parmesan cheese. Stir continuously until the cheese melts and the sauce is smooth and creamy. Season the sauce with Italian seasoning and crushed red pepper flakes for a hint of spice, stirring well to combine.
  5. Combine Chicken & Pasta: Return the seared chicken slices to the skillet with the sauce. Add the cooked pasta and toss everything together gently to coat the pasta and chicken evenly in the creamy sauce.
  6. Garnish & Serve: Remove from heat and garnish with fresh basil leaves and extra Parmesan cheese if desired. Serve immediately while hot for a comforting and flavorful meal.
