Ingredients
Vegetables and Aromatics
- 2 tbsp olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 6 cups baby spinach, packed
Grains and Legumes
- 3 cups cooked rice (long-grain brown or white)
- 1 (19 oz.) can chickpeas, drained and rinsed
Flavorings and Dairy
- 1/2 tsp salt, divided
- 1 tsp lemon zest
- 1 medium lemon, juiced
- 1 tsp dried dill
- 1/2 cup feta cheese, crumbled
- 1/4 cup parmesan cheese, grated
Instructions
- Preheat and Sauté Aromatics: Preheat your oven to 400°F. Place an oven-safe frying pan or skillet on medium heat and warm it up. Add the diced onion and minced garlic, cooking for 2-3 minutes until the onions become translucent and the garlic releases a fragrant aroma. Season with 1/4 teaspoon of salt during this step.
- Cook Spinach: Add the packed baby spinach to the pan and cook it down for approximately 2-3 minutes until wilted. Stir in the remaining 1/4 teaspoon salt to enhance the flavor.
- Combine Ingredients: Reduce the heat to low and mix in the drained chickpeas, cooked rice, lemon zest, fresh lemon juice, and dried dill. Taste the mixture and adjust seasonings or salt as needed to your preference.
- Press and Top Mixture: Use the back of a spatula or spoon to evenly spread the rice mixture throughout the pan. Gently press it down to create a compact layer.
- Add Cheeses and Bake: Sprinkle the grated parmesan and crumbled feta cheese evenly over the top of the rice mixture. Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the top starts to brown slightly.
