Description

A bright and zesty Lemon Baked Oats recipe perfect for a quick, nutritious breakfast or snack. This air-fried dish combines wholesome oats with fresh lemon juice and zest, topped with a creamy lemon yogurt glaze for a refreshing finish.

Ingredients

Oats Mixture

  • 1/2 cup oats
  • 1 egg
  • 1/3 cup milk
  • 1 tbsp sweetener (or sugar)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp baking powder

Lemon Glaze

  • 2 tbsp Greek yogurt
  • 1 tbsp sweetener or sugar
  • 1 tbsp lemon juice

Instructions

  1. Blend Ingredients: Add all oats mixture ingredients (oats, egg, milk, sweetener, lemon juice, lemon zest, baking powder) into your blender and blend for 30 seconds until well combined and smooth.
  2. Air Fry the Batter: Pour the blended mixture into a greased ramekin or small baking dish. Place it into the air fryer basket and bake at 175°C (350°F) for 8-10 minutes, or until the oats are fully cooked and set.
  3. Prepare Lemon Glaze: In a small bowl, combine Greek yogurt, lemon juice, and sweetener or sugar. Mix well until smooth and creamy.
  4. Serve: Remove the baked oats from the air fryer, top generously with the lemon yogurt glaze, and serve immediately for a delicious, tangy breakfast treat.

Notes

  • You can substitute the sweetener with honey, maple syrup, or any preferred sugar alternative.
  • For a dairy-free version, replace milk and Greek yogurt with plant-based alternatives.
  • Adjust baking time slightly depending on your air fryer model for perfect texture.
  • This recipe can be doubled to serve more people using a larger baking dish compatible with your air fryer.
