- 20 pitted deglet dates (or 10 Medjool dates, pitted)
- ¾ cup whole almonds
- ¾ cup raw cashews
- ¼ cup unsweetened shredded coconut
- Zest of 2 limes (2 teaspoons)
- Juice of 1 medium lime (2 tablespoons)
- Pinch of fine salt
Instructions
- Combine Ingredients: Place all ingredients into the bowl of a food processor.
- Process Mixture: Process until the mixture turns crumbly but still holds together well when pinched between your fingers, indicating the right consistency.
- Adjust Texture: If too dry, add another date or one teaspoon of water at a time and process again until it holds together. If too wet, add 2 tablespoons of additional nuts at a time and process to achieve a moist but cohesive texture.
- Shape Bars or Balls: Press the mixture onto a parchment paper-lined baking sheet forming a 9 x 9 inch square, or roll the mixture into 16 balls with your hands.
- Chill: Place the bars or balls in the fridge to chill if they feel sticky, helping them firm up.
- Cut and Store: Cut the square into 12 bars if shaped as a slab. Wrap each bar in parchment paper and store in a covered container in the fridge for up to one week, or freeze for up to two months in a freezer-safe container.
