These Key Lime Energy Bars are a refreshing and nutritious snack combining tangy lime zest and juice with naturally sweet dates, crunchy almonds, creamy cashews, and shredded coconut. Perfect for a quick energy boost, they are no-bake, vegan, gluten-free, and easy to prepare in minutes using a food processor.

  • 20 pitted deglet dates (or 10 Medjool dates, pitted)
  • ¾ cup whole almonds
  • ¾ cup raw cashews
  • ¼ cup unsweetened shredded coconut
  • Zest of 2 limes (2 teaspoons)
  • Juice of 1 medium lime (2 tablespoons)
  • Pinch of fine salt


Instructions

  1. Combine Ingredients: Place all ingredients into the bowl of a food processor.
  2. Process Mixture: Process until the mixture turns crumbly but still holds together well when pinched between your fingers, indicating the right consistency.
  3. Adjust Texture: If too dry, add another date or one teaspoon of water at a time and process again until it holds together. If too wet, add 2 tablespoons of additional nuts at a time and process to achieve a moist but cohesive texture.
  4. Shape Bars or Balls: Press the mixture onto a parchment paper-lined baking sheet forming a 9 x 9 inch square, or roll the mixture into 16 balls with your hands.
  5. Chill: Place the bars or balls in the fridge to chill if they feel sticky, helping them firm up.
  6. Cut and Store: Cut the square into 12 bars if shaped as a slab. Wrap each bar in parchment paper and store in a covered container in the fridge for up to one week, or freeze for up to two months in a freezer-safe container.
