A delicious and low-carb take on the classic Big Mac, these Keto Big Mac Roll-Ups combine savory ground beef, tangy pickles, and a creamy ‘special sauce’ all wrapped in crispy baked cheddar cheese circles for a perfect keto-friendly snack or meal.

- 2 cups Shredded Cheddar Cheese
- 1 pound Ground Beef
- 1/4 cup Onion, chopped finely
- 2 tbsp Dill Pickle Relish
- 1/2 tsp Worcestershire Sauce
- 1 cup Shredded Lettuce
Keto Big Mac Sauce
- 1/3 cup Mayonnaise
- 1 tbsp Dill Pickle Relish
- 1 tbsp Sugar-Free Ketchup
- 1 tsp Swerve Confectioner’s Sugar Substitute
Instructions
- Cook the Beef Mixture: Place the ground beef and finely chopped onion in a skillet over medium-high heat. Sauté until the meat is browned and the onions have softened, about 7-10 minutes. Drain excess grease from the skillet.
- Season the Meat: Add 2 tablespoons of dill pickle relish, Worcestershire sauce, and salt and pepper to taste to the cooked beef mixture. Continue to sauté for another 2-3 minutes to blend the flavors well. Remove from heat and set aside.
- Prepare the Sauce: In a separate bowl, thoroughly stir together the mayonnaise, 1 tablespoon dill pickle relish, sugar-free ketchup, and Swerve confectioner’s sugar substitute until smooth and well combined.
- Preheat the Oven: Set your oven to 400°F (204°C) and prepare a baking sheet by lining it with parchment paper.
- Form Cheese Circles: Arrange the shredded cheddar cheese in circular shapes approximately 3-4 inches in diameter on the parchment-lined baking sheet, spacing them apart evenly.
- Bake the Cheese Circles: Place the baking sheet in the preheated oven and bake for 6-8 minutes until the edges of the cheese circles become golden brown and crispy.
- Add the Filling: Remove the baking sheet from the oven carefully. Immediately spread a line of the prepared Big Mac sauce down the center of each warm cheese circle, followed by a sprinkle of shredded lettuce and a portion of the cooked beef mixture.
- Roll Up the Cheese: Quickly roll the cheese circles around the filling while they are still flexible. Allow them to cool so the cheese hardens and sets in the rolled shape.
- Serve: Once cooled and firm, serve the Keto Big Mac Roll-Ups as a satisfying low-carb snack or meal.
