Karepan Grilled Cheese combines the comforting melty goodness of classic grilled cheese with the rich, savory flavor of Japanese dry curry. This fusion sandwich features buttery, crispy bread hugging layers of cheddar and curry, finished with a zing of pickled red ginger for a unique twist. Quick to make and irresistibly satisfying, it’s perfect for a solo lunch or an elevated snack.
Ingredients
Bread & Dairy
- 2 slices bread
- 1 tablespoon butter
- 1/2 cup cheddar cheese, shredded (or your favorite melty cheese: mozzarella, Swiss, Monterey Jack, etc.)
Curry Layer
- 1/4 cup Japanese dry curry, warmed
Optional Garnish
- 1 teaspoon pickled red ginger (beni shoga)
Instructions
- Prep the Bread and Cheese: Butter one side of each bread slice. Shred the cheddar cheese if not pre-shredded and warm your Japanese dry curry.
- Assemble the Sandwich: Place one slice of bread, butter side down, into a medium-heated pan. Layer with half the cheese, followed by the warmed curry, pickled red ginger (if using), then the remaining cheese. Top with the other bread slice, buttered side up.
- Grill the Sandwich: Cook until the bottom is golden brown and crispy, about 2–4 minutes. Carefully flip and grill the other side for another 2–4 minutes, until golden brown and the cheese is melted.
- Serve: Remove from the pan, let cool for a minute, then slice and enjoy your Karepan Grilled Cheese while hot and melty.
Notes
- Try other melty cheeses like mozzarella, Swiss, or Monterey Jack for a different flavor.
- Use day-old bread for extra crispiness.
- The pickled red ginger adds a classic Japanese zing, but you can leave it out if you prefer.
- Make sure the curry is not too wet to prevent a soggy sandwich; use mostly the solids.
