Description

These irresistible crab-stuffed mushrooms are a delightful appetizer featuring large button mushrooms generously filled with a creamy, flavorful mixture of lump crab meat, cream cheese, Parmesan, and fresh herbs. Baked to golden perfection, they offer a savory bite that’s perfect for entertaining or a special snack.

Ingredients

Mushrooms

  • 12 large button mushrooms

Filling

  • 6 oz (170g) canned lump crab meat, drained
  • 4 oz (115g) cream cheese, softened
  • ¼ cup (25g) grated Parmesan cheese
  • 2 cloves fresh garlic, minced
  • 2 green onions, finely chopped (plus extra for garnish)
  • 1 tbsp fresh lemon juice
  • ½ tsp smoked paprika
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Prepare Mushrooms: Clean the button mushrooms thoroughly and carefully remove the stems to create hollow caps, which will be stuffed with the crab filling.
  3. Make the Filling: In a medium bowl, combine softened cream cheese, drained lump crab meat, minced garlic, finely chopped green onions, fresh lemon juice, grated Parmesan cheese, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
  4. Stuff the Mushrooms: Generously fill each hollow mushroom cap with the prepared crab mixture, ensuring each one is nicely packed.
  5. Bake: Arrange the stuffed mushrooms on the lined baking sheet and bake in the preheated oven for 20 minutes, or until the tops turn a lovely golden brown and the mushrooms become tender.
  6. Garnish and Serve: Remove from oven and garnish with extra chopped green onions or fresh parsley. Serve warm and enjoy this savory appetizer immediately.

Notes

  • Ensure crab meat is well drained to prevent soggy filling.
  • Use cream cheese at room temperature for easier mixing.
  • For an extra kick, add a pinch of cayenne pepper to the filling.
  • These can be prepared ahead of time and baked just before serving.
  • Substitute Parmesan with Pecorino Romano for a sharper taste.
