Ingredients
For the Batter
- 1 cup All-purpose flour (Gluten-free flour can be used)
- 1/4 cup Granulated sugar (Coconut sugar can be used for a less refined option)
- 1 tablespoon Baking powder (Avoid substituting directly with baking soda)
- 1/4 teaspoon Salt
- 1 teaspoon Ground cinnamon
- 1 large Egg (Can substitute with a flax egg for vegan option)
- 1/2 cup Milk (Dairy-free milk can be used)
- 1 whole Fresh pineapple (Sliced into rings)
For Frying
- 2 cups Vegetable oil (Canola or coconut oil can be used)
For Dusting
- 1 tablespoon Additional cinnamon and sugar (Adjust mixture to liking)
Instructions
- Prepare Pineapple: Slice your fresh pineapple into 1/2-inch thick rings, ensuring a steady surface for even cooking. Set aside on a plate.
- Make Batter: In a mixing bowl, whisk together flour, sugar, baking powder, salt, and ground cinnamon. Create a well in the center, add the egg and milk, stirring until smooth to form the batter.
- Heat Oil: Pour vegetable oil into a deep fryer or large pot and heat to 375°F (190°C). Use a thermometer for accurate temperature control.
- Batter Pineapple Rings: Dip each pineapple ring into the batter, ensuring full coverage. Allow excess batter to drip off before frying to avoid clumping.
- Fry Fritters: Carefully place the coated pineapple rings into the hot oil, frying in batches to avoid overcrowding. Cook for about 2 minutes on each side until they turn golden brown and crispy.
- Drain and Dust: Remove fritters from oil and drain on paper towels to absorb excess oil. While still warm, dust generously with the cinnamon and sugar mixture for extra flavor.
- Serve: Plate the fritters warm and serve with coconut ice cream if desired for an added tropical touch.

- For a vegan version, replace the egg with a flax egg and use dairy-free milk.
- Adjust cinnamon and sugar dusting to your taste preferences.
- Ensure pineapple rings are evenly sliced for uniform cooking.
- Drain fritters well on paper towels to avoid excess oiliness.
