Ingredients
Chicken
- 2 tbsp olive oil, extra virgin
- 4 chicken breasts
- Salt & pepper to taste
- 1 tbsp dried basil
- 1 tbsp minced garlic
Bruschetta
- 3 ripe roma tomatoes, diced
- 7 basil leaves, chopped
- 1 sprig oregano, chopped
- 2 tsp minced garlic
- 1 tbsp olive oil, extra virgin
- 1 tsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp pepper
Balsamic Glaze
- 1 cup balsamic vinegar
Instructions
- Cook the Chicken: Heat 2 tablespoons of extra virgin olive oil in a sauté pan or cast iron skillet over medium-high heat until hot. Season the chicken breasts with salt, pepper, and dried basil on both sides. Place chicken breasts in the pan and cook until browned on one side, about 5 minutes. Flip the chicken and add 1 tablespoon of minced garlic to the pan. Continue cooking the chicken until it is browned and cooked through on the other side, about 5 more minutes.
- Prepare the Bruschetta: In a bowl, combine diced roma tomatoes, chopped basil leaves, chopped oregano, 2 teaspoons minced garlic, 1 tablespoon extra virgin olive oil, 1 teaspoon balsamic vinegar, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Stir well to combine all ingredients evenly.
- Make the Balsamic Glaze: Pour 1 cup of balsamic vinegar into a small saucepan. Place over medium-high heat and bring to a boil. Reduce heat to medium and let it simmer, watching closely, until the vinegar thickens and coats the back of a spoon, about 10 minutes. Stir occasionally to prevent burning. Remove from heat and allow to cool; it will thicken more as it cools, yielding roughly 1/3 cup of glaze.
- Assemble the Dish: Spoon the prepared bruschetta mixture over the cooked chicken breasts. Drizzle the cooled balsamic glaze generously on top of the bruschetta-topped chicken to finish.
