Ingredients

Dry Ingredients

  • 1 cup oats
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder

Wet Ingredients

  • 1 large apple, peeled and chopped
  • 3 tbsp honey (or 3-4 tbsp dark brown sugar as an alternative)
  • 1 tsp vanilla extract
  • 3 tbsp yogurt
  • 2 eggs
  • 1 tbsp butter or coconut oil


Instructions

  1. Preheat Oven: Set your oven to 180°C (350°F) to get it ready for baking the cake.
  2. Prepare the Batter: Place all ingredients except 1/4 cup of the oats into a blender or bowl if using a hand blender. Use only 3/4 of the oats initially. Blend or process until the mixture is smooth. Then gently fold in the remaining 1/4 cup of oats to add texture to the batter.
  3. Prepare Baking Pan: Line a small-sized baking pan with parchment paper to prevent sticking and make removal easier.
  4. Bake the Cake: Pour the batter into the lined baking pan and bake in the preheated oven for 20-30 minutes. Check doneness by inserting a toothpick into the center—if it comes out clean, the cake is ready.
  5. Cool and Store: Remove the cake from the oven and allow it to cool completely. Once cooled, slice the cake and store the slices in an airtight container in the refrigerator for at least one hour. Cooling enhances the flavor and texture of the cake.
