Description
This Healthy Baked Feta Potatoes recipe features tender baby potatoes roasted with cherry tomatoes, garlic, and a block of creamy feta cheese. The combination results in a flavorful, easy-to-make dish with a Mediterranean twist, perfect for a nutritious meal or prep option.
Ingredients
Vegetables
- 1.5 lbs (700g) baby potatoes, halved or quartered
- 1.5 cups cherry tomatoes, halved
- 2 cloves garlic, minced
Dairy
- 1 block (7 oz/200g) feta cheese
Oils & Seasonings
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon black pepper
- Salt to taste (go easy as feta is salty)
Garnish
- Fresh basil or parsley, for garnish (optional)
Instructions
- Preheat and Prep: Preheat your oven to 400°F (200°C). Wash and cut the baby potatoes into halves or quarters depending on their size. In a large baking dish, combine the potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss everything well to coat.
- Add the Feta: Place the block of feta cheese in the center of the baking dish, nestled among the seasoned potatoes and tomatoes. Drizzle a little olive oil over the top of the feta to help it soften and bake evenly.
- Roast Until Golden: Bake for 35 to 40 minutes, stirring the potatoes halfway through the cooking time to ensure even roasting. The dish is ready when the potatoes are golden and tender, tomatoes have burst, and the feta is soft and lightly browned.
- Stir and Serve: Remove the dish from the oven and stir the baked feta into the potatoes and tomatoes, forming a creamy, tangy sauce that coats everything. Garnish with fresh basil or parsley if desired. Serve warm or allow to cool for meal prep.
Notes
- ✅ Use waxy potatoes like baby potatoes, red potatoes, or fingerlings as they hold their shape well during roasting.
- ✅ Don’t skip stirring after baking, as mixing the feta creates a delicious creamy dressing throughout the dish.
- ✅ Customize your recipe by adding red onions, olives, or a squeeze of lemon juice after baking for added Mediterranean flavors.
