Ingredients

Eggplant and Coating

  • 1 medium eggplant
  • 2 cups Italian breadcrumbs
  • ¼ cup shredded parmesan cheese, plus extra for topping
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 large eggs

For Topping

  • 1 cup tomato sauce
  • 1 cup shredded mozzarella cheese
  • Freshly chopped basil (optional)


Instructions

  1. Prepare the Eggplant: Slice off the ends of the eggplant about ¼ inch from the stem. Then cut into ½-inch thick rounds. Dry slices on a baking sheet or paper towels if needed to remove excess moisture for better crisping.
  2. Make the Breadcrumb Mixture: In a shallow bowl, combine Italian breadcrumbs, shredded parmesan cheese, garlic powder, Italian seasoning, kosher salt, and ground black pepper. Mix well to blend the flavors.
  3. Set Up the Dredging Station: Crack eggs into another shallow bowl, season with salt and pepper, and whisk until combined. Arrange the egg mixture, breadcrumb mixture, and eggplant slices for easy dipping.
  4. Bread the Eggplant: Dip each eggplant slice into the egg mixture, then thoroughly coat with the breadcrumb mixture, pressing breadcrumbs onto the surface. Place breaded slices back onto the baking sheet.
