Instructions
- Preheat Oven: Preheat your oven to 400°F (204°C) and line a small baking sheet with parchment paper to prevent sticking.
- Mix Ingredients: In a mixing bowl, combine the Greek yogurt and self-rising flour until a chunky dough forms. If using salt, add it here for enhanced flavor.
- Knead Dough: Turn the dough onto a well-floured surface. Knead the dough with your hands for about 60 seconds until it forms a smooth, round ball. Avoid over-kneading to keep the biscuits tender.
- Shape Dough: Press the dough into a ¾ inch thick rectangle with your hands. Fold the top half over towards the center, then fold the bottom half over the center so the ends meet without overlapping. Rotate the dough 90 degrees and repeat the folding process twice more. Finally, press the dough again into a ¾ inch thick rectangle.
- Cut Biscuits: Dip a 2 and ¾ inch biscuit cutter in flour, then cut the biscuits from the dough without twisting the cutter to prevent deflating. Place the biscuits on the prepared baking pan close together to help them rise evenly.
- Add Toppings: Lightly spray the tops of the biscuits with cooking spray or brush with melted butter. Sprinkle with kosher salt if desired for extra flavor.
- Bake: Bake the biscuits on the middle rack (for hotter ovens) or top rack (for less hot ovens) for 17 to 23 minutes or until puffed and golden brown.
