Description

Delicious and easy grilled shrimp skewers marinated in garlic, lemon juice, olive oil, salt, and pepper, perfect for a quick and healthy meal. Juicy, flavorful shrimp cooked on the grill to a tender, pink perfection.

Ingredients

Shrimp Skewers

  • 1 lb. large shrimp, peeled and deveined, tail on
  • 2 cloves garlic, minced
  • Juice from 1 lemon, about 3 Tablespoons
  • 1 Tablespoon olive oil
  • 1 teaspoon ground or cracked pepper
  • ½ teaspoon sea salt

Instructions

  1. Prepare Marinade: In a medium mixing bowl, combine minced garlic, lemon juice, olive oil, sea salt, and ground pepper. Mix thoroughly to blend all the flavors.
  2. Marinate Shrimp: Add the peeled and deveined shrimp to the marinade and toss to coat evenly. Let the shrimp marinate for 30 minutes to 1 hour to enhance flavor and tenderness.
  3. Skewer the Shrimp: Thread the marinated shrimp onto metal or soaked wooden skewers, then discard any remaining marinade to prevent flare-ups on the grill.
  4. Preheat Grill: Heat your grill to medium-high heat, ensuring it’s ready for cooking the shrimp skewers evenly.
  5. Grill Shrimp: Place the shrimp skewers on the grill and cook for about 2 minutes on each side until the shrimp turn pink and opaque, indicating they are fully cooked.
  6. Serve: Remove skewers from grill and serve hot. Optionally, squeeze fresh lemon wedges over the shrimp for added zest and flavor.

Notes

  • If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning.
  • Oven alternative: Preheat the broiler to high, coat a baking sheet with cooking spray, place the skewers in a single layer, and broil for 4-6 minutes, flipping halfway through. Watch carefully to avoid overcooking.
  • Store leftovers by removing shrimp from skewers and keeping them in an airtight container in the fridge for up to 3 days.
