Tofu and Marinade
- 1 block extra firm tofu
- 1 cup vegan BBQ sauce
Vegetables & Fruit
- 2 cups fresh pineapple, cut into 1-inch pieces
- 1 orange bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 package mushrooms, stems removed
- 1 red onion, cut into 1-inch pieces

Instructions
- Press the Tofu: Begin by pressing the tofu for about 15 minutes. Place the tofu on a plate lined with paper towels, cover it with another paper towel, and place a heavy object like a cookbook on top to remove excess moisture. This step ensures the tofu absorbs more flavor and grills better.
- Prepare the Vegetables and Pineapple: While the tofu presses, cut the fresh pineapple, orange, yellow, and green bell peppers, and red onion into 1-inch pieces. Remove the stems from the mushrooms. This uniform size helps the ingredients cook evenly on the grill.
- Cut the Tofu: Once pressed, cut the tofu into 1-inch cubes to match the size of the vegetables and pineapple pieces.
- Assemble the Kebabs: Thread the pineapple, tofu, bell peppers, mushrooms, and red onion onto metal skewers, alternating the ingredients to create a colorful and balanced kebab. Arrange the skewers on a baking sheet for easy handling.
- Apply the BBQ Sauce: Generously brush all sides of the assembled kebabs with the vegan BBQ sauce, coating the pieces evenly to ensure maximum flavor.
- Grill the Kebabs: Preheat the grill to medium heat. Place the skewers onto the grill and cook for about 10 minutes, turning them halfway through to achieve even grilling. After flipping, brush the kebabs with another layer of the BBQ sauce to enhance the taste and caramelization.
