For the Chicken

Instructions

  1. Prep the Grill: Preheat your grill to high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
  2. Grill the Peaches: Arrange peeled and quartered peaches on the grill. Cook each side for 3-4 minutes, until they have nice grill marks and are slightly softened. Remove and let cool.
  3. Prepare the Sauce: Once the peaches are cool enough to handle, chop them into bite-sized pieces. Finely chop the chipotle pepper. In a medium bowl, combine the chopped peaches, chipotle pepper, sliced green onions, and adobo sauce. Toss gently to coat, then fold in the cilantro, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
