Ingredients

Topping

  • 1/2 cup gluten-free all-purpose flour with xanthan gum (such as Pillsbury gluten-free flour)
  • 1/2 cup gluten-free quick oats
  • 1/2 cup light brown sugar, packed
  • 1/2 teaspoon gluten-free baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/3 cup butter, diced into small cubes and softened (use Smart Balance butter for dairy-free/vegan option)

Filling

  • 4 cups apples, peeled and chopped
  • 3 tablespoons melted butter (Smart Balance butter for dairy-free/vegan option)
  • 2 tablespoons gluten-free all-purpose flour with xanthan gum
  • 1 tablespoon lemon juice
  • 3 tablespoons milk (unsweetened almond milk for dairy-free/vegan option)
  • 1 teaspoon pure vanilla extract
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt


Instructions

  1. Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease an 8″ x 8″ baking dish with gluten-free nonstick cooking spray, such as gluten-free coconut oil spray.
  2. Make the Topping: In a medium bowl, combine gluten-free flour, oats, brown sugar, baking powder, cinnamon, and salt. Add the softened butter cubes and mix with a fork until the mixture resembles chunky crumbs. Refrigerate this topping mixture while you prepare the apple filling.
  3. Prepare the Apple Filling: In a large bowl, combine the peeled and chopped apples with lemon juice, milk, melted butter, vanilla extract, brown sugar, cinnamon, gluten-free flour, and salt. Stir well until all ingredients are fully incorporated.
  4. Assemble the Crisp: Pour the apple mixture evenly into the prepared baking dish. Sprinkle the chilled crumb topping evenly over the apples.
  5. Bake: Bake in the preheated oven for 30 to 35 minutes or until the topping is golden brown and the apples are bubbly and tender.
