Ingredients
Topping
- 1/2 cup gluten-free all-purpose flour with xanthan gum (such as Pillsbury gluten-free flour)
- 1/2 cup gluten-free quick oats
- 1/2 cup light brown sugar, packed
- 1/2 teaspoon gluten-free baking powder
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon salt
- 1/3 cup butter, diced into small cubes and softened (use Smart Balance butter for dairy-free/vegan option)
Filling
- 4 cups apples, peeled and chopped
- 3 tablespoons melted butter (Smart Balance butter for dairy-free/vegan option)
- 2 tablespoons gluten-free all-purpose flour with xanthan gum
- 1 tablespoon lemon juice
- 3 tablespoons milk (unsweetened almond milk for dairy-free/vegan option)
- 1 teaspoon pure vanilla extract
- 1/4 cup light brown sugar, packed
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon salt
Instructions
- Preheat and Prepare Baking Dish: Preheat your oven to 375°F (190°C) and lightly grease an 8″ x 8″ baking dish with gluten-free nonstick cooking spray, such as gluten-free coconut oil spray.
- Make the Topping: In a medium bowl, combine gluten-free flour, oats, brown sugar, baking powder, cinnamon, and salt. Add the softened butter cubes and mix with a fork until the mixture resembles chunky crumbs. Refrigerate this topping mixture while you prepare the apple filling.
- Prepare the Apple Filling: In a large bowl, combine the peeled and chopped apples with lemon juice, milk, melted butter, vanilla extract, brown sugar, cinnamon, gluten-free flour, and salt. Stir well until all ingredients are fully incorporated.
- Assemble the Crisp: Pour the apple mixture evenly into the prepared baking dish. Sprinkle the chilled crumb topping evenly over the apples.
- Bake: Bake in the preheated oven for 30 to 35 minutes or until the topping is golden brown and the apples are bubbly and tender.
- Cool and Serve: Remove from the oven and allow the apple crisp to cool for 5 to 10 minutes before serving.
- Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze the apple crisp for up to 3 months. Thaw in the refrigerator overnight and reheat in the microwave or at 350°F (177°C) oven for 15–20 minutes before serving.
