Description

Glazed Roasted Carrots feature sweet, buttery roasted carrots tossed with a garlic-honey glaze. This easy side dish is perfectly tender, flavorful, and ideal for everything from holiday feasts to weeknight dinners.

Ingredients

Vegetables

  • 2 pounds carrots, diagonally cut into 23 inch pieces

Glaze

  • 5 tablespoons butter
  • 4 cloves garlic, minced
  • 2 tablespoons honey

Seasonings & Garnish

  • 1/4 teaspoon salt, or to taste
  • 1/4 teaspoon fresh ground black pepper
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat and Prepare Carrots: Preheat your oven to 425°F (220°C). Lightly grease a baking sheet. Wash, peel, and cut the carrots diagonally into 2-3 inch pieces to ensure they cook evenly.
  2. Make Garlic Honey Butter: In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for about 3 minutes, stirring, until the garlic is lightly browned and fragrant. Remove the pan from heat and stir in the honey until well combined.
  3. Toss Carrots with Glaze: Place the carrot pieces in a large mixing bowl. Pour the warm garlic honey butter over the carrots, add salt and pepper, and toss until the carrots are evenly coated with the glaze.
  4. Arrange and Roast: Spread the coated carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 22-25 minutes, stirring halfway through, until the carrots are browned and tender.
  5. Finish and Serve: Remove the carrots from the oven. Taste and adjust seasonings as needed. Transfer to a serving dish, sprinkle with chopped parsley, and serve warm.

Notes

  • Cut carrots into even pieces to ensure they cook uniformly.
  • This dish can be prepared in advance and gently reheated before serving.
  • Baby carrots can be substituted, but reduce the cooking time as they roast faster.
  • Feel free to add a sprinkle of orange zest or a dash of cinnamon for a flavor twist.
