- 2 pounds carrots, diagonally cut into 2–3 inch pieces
Glaze
- 5 tablespoons butter
- 4 cloves garlic, minced
- 2 tablespoons honey
Seasonings & Garnish
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon fresh ground black pepper
- Chopped fresh parsley, for garnish
Instructions
- Preheat and Prepare Carrots: Preheat your oven to 425°F (220°C). Lightly grease a baking sheet. Wash, peel, and cut the carrots diagonally into 2-3 inch pieces to ensure they cook evenly.
- Make Garlic Honey Butter: In a small saucepan, melt the butter over medium heat. Add minced garlic and cook for about 3 minutes, stirring, until the garlic is lightly browned and fragrant. Remove the pan from heat and stir in the honey until well combined.
- Toss Carrots with Glaze: Place the carrot pieces in a large mixing bowl. Pour the warm garlic honey butter over the carrots, add salt and pepper, and toss until the carrots are evenly coated with the glaze.
- Arrange and Roast: Spread the coated carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 22-25 minutes, stirring halfway through, until the carrots are browned and tender.
- Finish and Serve: Remove the carrots from the oven. Taste and adjust seasonings as needed. Transfer to a serving dish, sprinkle with chopped parsley, and serve warm.

- This dish can be prepared in advance and gently reheated before serving.
- Baby carrots can be substituted, but reduce the cooking time as they roast faster.
