Ingredients
Noodles
- 12 ounces brown rice noodles
Garlic Sauce
- 1 tablespoon neutral oil (avocado, olive, or refined coconut oil)
- 6 cloves garlic, minced very finely or pressed
- 1/4-1/3 cup low sodium soy sauce or tamari
- 2 tablespoons vegetable broth
- 1 ½ tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 1 tablespoon honey or maple syrup
- 2 tablespoons tahini
- 2 teaspoons sriracha
- ½ teaspoon ground ginger
Garnishes
- Scallions, sliced
- Red pepper flakes
- Crushed peanuts
Instructions
- Cook the noodles: Bring a large pot of water to a boil and cook the brown rice noodles according to package instructions until al dente. Drain and set aside.
- Prepare garlic: Mince the garlic very finely or use a garlic press to achieve a super fine texture since the sauce will not be blended.
- Sauté garlic: Add the minced garlic to a pan with the neutral oil (such as avocado, olive, or refined coconut oil). Sauté over medium heat until the edges of the garlic turn golden brown, releasing aromatic flavors.
- Mix sauce ingredients: While the garlic sautés, whisk together the low sodium soy sauce or tamari, vegetable broth, rice vinegar, toasted sesame oil, honey or maple syrup, tahini, sriracha, and ground ginger in a bowl until smooth with no clumps.
- Combine sauce and garlic: Pour the prepared sauce mixture into the pan with the sautéed garlic and stir well to incorporate all ingredients evenly.
- Simmer sauce: Allow the sauce to simmer gently for 2 to 3 minutes until it thickens slightly and flavors meld together.
- Toss noodles with sauce: Add the cooked noodles into the pan with the sauce. Toss well ensuring all noodles are evenly coated in the garlic sesame sauce.
- Garnish and serve: Transfer the noodles to serving dishes and garnish with sliced scallions, red pepper flakes, and crushed peanuts for added flavor and texture. Serve immediately and enjoy!
Notes
- Use low sodium soy sauce or tamari to prevent the dish from becoming too salty. Adjust quantity between 1/4 to 1/3 cup based on personal taste sensitivity to salt.
- The neutral oil is used only for sautéing garlic; suitable options include avocado, olive, or refined coconut oil.
- The recipe as written is mildly spicy. Feel free to increase sriracha or red pepper flakes to suit your preferred spice level.
- Garlic Sesame Noodles will keep fresh for up to 5 days if stored in an airtight container in the refrigerator.
- If adding vegetables, chicken, tofu, or other mix-ins, consider doubling the sauce recipe to ensure the noodles are sufficiently coated.
