Ingredients
For the Potatoes
- 4-5 medium yellow potatoes, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Chicken
- 2 boneless skinless chicken breasts (about 1 pound), cut into 1-inch cubes
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 tablespoons minced garlic (about 6 cloves)
- 1/3 cup garlic parmesan sauce (store-bought or homemade)
- 1 cup shredded mozzarella cheese
Optional Garnish
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons grated Parmesan cheese
Instructions
- Preheat and prepare potatoes: Preheat air fryer to 400°F (200°C) or oven to 425°F (220°C). Wash, peel, and cut potatoes into 1/2-inch cubes and place in a medium bowl. Toss potato cubes with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
- Cook potatoes: For air fryer, cook potatoes for 18-20 minutes, shaking the basket every 5-6 minutes to ensure even crisping. For oven, spread potatoes on a baking sheet and roast for 25-30 minutes, stirring halfway through to promote even browning.
- Prepare chicken: While potatoes cook, cut chicken breasts into 1-inch cubes. Season with salt, pepper, paprika, onion powder, and Italian seasoning to evenly coat the pieces.
- Cook chicken: Heat butter in a large oven-safe skillet over medium-high heat. Add seasoned chicken and cook for 6-8 minutes, stirring occasionally, until chicken reaches an internal temperature of 165°F (74°C).
- Add garlic: Reduce heat to medium-low, add minced garlic to the skillet, and stir for 30 seconds or until fragrant, careful not to burn the garlic.
- Add sauce and combine: Pour garlic parmesan sauce over the chicken and stir well to coat evenly. Then add the cooked potato cubes into the skillet, gently tossing to combine all ingredients with the sauce.
- Add cheese and finish cooking: Sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes mixture. Option 1: Cover skillet with a lid and cook on low heat for 2-3 minutes until cheese melts. Option 2: Place skillet under a broiler for 1-2 minutes until cheese is bubbly and lightly golden.
- Serve: Remove skillet from heat. Garnish with chopped fresh parsley and grated Parmesan cheese if desired. Serve immediately while hot and cheesy.
Notes
- For a homemade garlic parmesan sauce: Combine 1/4 cup melted butter, 1/4 cup grated Parmesan, 1 teaspoon garlic powder, 1/2 teaspoon Italian seasoning, and a pinch of salt.
- Add 1/2 cup diced bell peppers or 1/4 cup diced red onion to the dish for extra color and flavor.
- For a spicier version, add 1/4 teaspoon red pepper flakes to the chicken seasoning.
- Freshly grated mozzarella will melt more smoothly and create a creamier texture compared to pre-shredded cheese.
