This recipe features russet potatoes baked to tender perfection, scooped and brushed with a savory mixture of olive oil, garlic, rosemary, thyme, paprika, salt, and pepper, then roasted until golden and crispy. Optional Parmesan cheese adds a delightful cheesy touch, and fresh parsley garnish brightens the dish.

Potatoes

  • 4 large russet potatoes

Herb Oil Mixture

  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Optional

  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped for garnish


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot and ready for baking the potatoes and roasting the skins.
  2. Prepare the Potatoes: Thoroughly wash and scrub the russet potatoes, then pat them dry. Pierce each potato several times with a fork to allow steam to escape while baking.
  3. Bake Potatoes: Place the potatoes directly on the oven rack or on a baking sheet. Bake them for 45 to 60 minutes until they are tender when pierced with a fork.
  4. Cool & Scoop: Remove the baked potatoes from the oven and let them cool for 10 to 15 minutes. Once cool enough to handle, cut each potato in half lengthwise and gently scoop out most of the flesh, leaving about a 1/4 inch layer attached to the skin.
  5. Prepare Seasoning Mix: In a small bowl, combine the olive oil, minced garlic, dried rosemary, dried thyme, paprika, sea salt, and black pepper. Mix thoroughly to create a flavorful herb oil.
  6. Brush the Potato Skins: Brush the insides of the scooped potato skins with the herb oil mixture, making sure each is well-coated for maximum flavor.
  7. Roast the Potato Skins: Arrange the seasoned potato skins on a baking sheet with the cut side up. Roast them in the oven for 15 to 20 minutes until the edges become crisp and golden.
  8. Add Cheese (Optional): If using Parmesan cheese, sprinkle it over the potato skins during the last 5 minutes of roasting so it melts and adds a delicious cheesy crust.
  9. Garnish & Serve: Once roasted, remove the potato skins from the oven, garnish with freshly chopped parsley if desired, and serve warm with your choice of dipping sauce or enjoy on their own.
